Lately

Things have been a bit busy lately.  With what?  I’m not totally sure, but I do know that I’ve been having that recurring feeling of things piling up a bit and wishing that there were more hours in the day.

The funny thing about when things get busy for me is, I tend to cook more.  I think that it helps de-stress me and sort things out.  So, if you follow me on Instagram and start to notice a whole bunch of cooking photos, you’ve got a good idea that things are a bit hectic.  I think that it also helps me feel better in the sense that, even though things are busy, the hubs and I can sit down and enjoy a nice meal together and connect (code word for no phones during meals) (except for pictures of course!).

stuffed artichokes (pre-bake), another fav around here (kudos to my father-in-law) and one I’ll definitely share the recipe for – the stuffing is addictive!
